Veggie Sandwich receipe

Ingredients: – Whole grain English muffin – 1/2 avocado – 1/4 cup of hummus – 1 small tomato, sliced – 1 small cucumber, sliced – 1-2 fried eggs or a tofu scramble – Red pepper flakes, to taste Instructions: 1. Toast a whole grain English muffin to your desired level of crispiness. 2. While the muffin is toasting, slice the tomato and cucumber. 3. Mash 1/2 of an avocado in a small bowl with a fork. 4. Once the English muffin is toasted, spread hummus on one half and mashed avocado on the other. 5. Add sliced tomato and cucumber on top of the hummus. 6. Add a fried egg or a tofu scramble on top of the avocado. 7. Sprinkle with red pepper flakes to taste. 8. Close the sandwich and enjoy!

Apple Cinnamon Sandwich

Ingredients: – 2 slices of whole grain bread – 1 small apple, thinly sliced – 1/4 cup of low-fat cream cheese – 1 tablespoon of honey – 1/2 teaspoon of ground cinnamon – 1/2 teaspoon of vanilla extract – 1 tablespoon of unsalted butter Instructions: 1. In a small bowl, mix together the cream cheese, honey, cinnamon, and vanilla extract until smooth. 2. Spread the cream cheese mixture on one slice of bread. 3. Layer thinly sliced apple on top of the cream cheese mixture. 4. Top with the other slice of bread to make a sandwich. 5. In a non-stick pan, melt the unsalted butter over medium heat. 6. Place the sandwich in the pan and cook for 2-3 minutes on each side until golden brown and the cheese is melted. 7. Remove from the pan, cut in half, and serve.

Greek Yogurt and Berry Sandwich

Ingredients: – 2 slices of whole grain bread – 1/2 cup of Greek yogurt – 1 tablespoon of honey – 1/2 teaspoon of vanilla extract – 1/2 cup of mixed berries (such as strawberries, blueberries, and raspberries) Instructions: 1. In a small bowl, mix together the Greek yogurt, honey, and vanilla extract until smooth. 2. Spread the Greek yogurt mixture on one slice of bread. 3. Layer mixed berries on top of the Greek yogurt mixture. 4. Top with the other slice of bread to make a sandwich. 5. Cut in half and serve.

Smoked Salmon Sandwich

Ingredients: – 2 slices of whole grain bread – 2 oz. of smoked salmon – 1 tablespoon of low-fat cream cheese – 1 teaspoon of chopped fresh dill – 1/2 small red onion, thinly sliced – 1 small tomato, sliced – 1-2 lettuce leaves – Salt and pepper, to taste Instructions: 1. Toast two slices of whole grain bread to your desired level of crispiness. 2. In a small bowl, mix together the low-fat cream cheese and chopped fresh dill until combined. 3. Spread the cream cheese mixture evenly on one slice of the toasted bread. 4. Layer smoked salmon on top of the cream cheese mixture. 5. Add thinly sliced red onion, sliced tomato, and lettuce leaves on top of the salmon. 6. Sprinkle with salt and pepper to taste. 7. Top with the other slice of toast. 8. Slice the sandwich in half, if desired, and serve.

Tuna Salad Sandwich

Ingredients: – 1 can of tuna – 2 tablespoons of mayonnaise – 1 tablespoon of dijon mustard – 1 tablespoon of lemon juice – Salt and pepper to taste – 2 slices of bread – Lettuce, tomato, and/or other toppings (optional) Instructions: 1. Drain the can of tuna and transfer it to a mixing bowl. 2. Add the mayonnaise, dijon mustard, lemon juice, salt, and pepper to the mixing bowl. Mix everything together until it's well combined. 3. Toast the bread slices (if desired) and place them on a plate. 4. Add a layer of lettuce (or other greens) on top of one slice of bread. 5. Spoon the tuna salad mixture on top of the lettuce. 6. Add any additional toppings you like, such as tomato slices or avocado. 7. Top with the other slice of bread and enjoy!
